Malbim: Daniel thought that Nebuchadnetzar designated him for idolatry, and he wants to make Daniel transgress Torah law via eating offerings to idolatry. In such a case one must be Moser Nefesh. Therefore, he explicitly said that it is repulsive to his creed. Chananyah, Misha'el and Azaryah did not do so ? they did not think that Nebuchadnetzar seeks to make them transgress.
