Radak: It is the first of all fruits, like the Torah says "Bikurei Kol Asher b'Artzam Asher Yavi'u la'Shem? Yihyeh Lach" (Bamidbar 18:13 ). "Kol Asher b'Artzam" teaches what is special to their land ? the seven species.
